More Recipes (of the unhealthy variety)

I don't know what it is, but I am STARVING this week.  I ran across this website called BAKERELLA and I think I'm in love.  Jillian would not approve.  But Jillian's not here, now is she??  *evil grin* Ok.  All things within moderation.  I'll even provide you with Jillian's brownie recipe, courtesy of Julie.  But FIRST, the sinful recipes!


S'MORE BROWNIES   I tried really hard to rationalize how these could be relatively healthy for you, but I can't just out and out lie like that.  I do intend on making these one day though!


PILLOW COOKIES  If you thought the above was bad, don't look at these at all.


 

MINI MAPLE PANCAKE MUFFINS  Ok.  These aren't terrible for you.  All natural ingredients, so I can't find fault.  I would suggest replacing the flour with whole wheat flour for a healthier option.  This is SO going to be breakfast this week.  I can't wait to make them.

Okay.  Here are Jillian's HEALTHY brownies.  This is a recipe I have actually made.  IF you are craving a thick, chocolaty, dense, cake-like brownie, you will be disappointed.  But, if you are willing to be open minded to "healthy desserts" you'll fall in love with this.  A light and airy chocolaty treat.  It took me a brownie or two or three ( I had to keep eating them just to make sure I had a good grip on how I felt about them!) to adjust to the difference but they are very addictive - and yummy!  Sorry - no picture!

olive oil spray for the pan
2/3 c mild honey (clover or orange blossom)
1/3 c natural unsweetened cocoa powder
1/2 c white whole-wheat flour
1/4 tsp. aluminum-free baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/2 c unsweetened applesauce
2 tbsp. olive oil
1 large egg, room temperature
3/4 tsp. pure vanilla extract
 
Preheat oven to 350 and spray 8" sq. pan with olive oil, and set aside.
Place the honey in a large glass measuring cup and microwave on high until it is runny and almost bubbling (45-60 seconds).  Add the cocoa, stir, and let cool to room temperature.
In another bowl, place the flour, baking powder, baking soda and salt together and combine.
In another bowl, combine the applesauce, oil, egg, and vanilla and blend.  Add the honey/cocoa mix and whisk until smooth.  Add the flour mixture and stir thoroughly.
Place batter into prepared pan and bake for 25 minutes (until toothpick inserted into middle comes out clean or with crumbs attached, not gooey).
